Colleen's Chickpea Burgers with Tahini Sauce
The chickpea burgers with tahini sauce that Colleen makes are a tasty and filling vegetarian option. Spices and herbs that smell good are used to season the chickpea patties, which are then pan-fried until they are perfectly crispy. For a tasty sandwich, put them on toasted buns and top with crisp lettuce, juicy tomato slices, and creamy tahini sauce.
Ingredients:
- 2 cans chickpeas, drained and rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 burger buns
- Lettuce leaves, for serving
- Tomato slices, for serving
- Tahini sauce, for serving
Instructions:
In a food processor, pulse the chickpeas until finely chopped
Transfer the chopped chickpeas to a large mixing bowl
Add onion, garlic, breadcrumbs, parsley, cumin, paprika, salt, and pepper to the bowl
Mix well to combine
Form the mixture into 4 patties
Heat olive oil in a skillet over medium heat
Cook the patties for 4-5 minutes on each side, until golden brown and crispy
Toast the burger buns lightly
To assemble the burgers, place lettuce leaves on the bottom half of each bun, followed by a chickpea patty, tomato slices, and a generous drizzle of tahini sauce
Cover with the top half of the bun and serve immediately
