Buffalo Chicken Chili
Buffalo wing sauce gives this chili a kick, and the soft chicken, beans, corn, and spices make it feel good. Great for a cozy dinner during the week or a get-together on game day!
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz corn, drained
- 1 can 14
- 5 oz diced tomatoes
- 1 cup chicken broth
- 1/2 cup buffalo wing sauce
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, diced avocado, chopped green onions
Instructions:
Place diced chicken, chopped onion, minced garlic, black beans, kidney beans, corn, diced tomatoes, chicken broth, buffalo wing sauce, cumin, chili powder, and dried oregano into the slow cooker
Season with salt and pepper to taste
Stir everything together
Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and flavors are blended
Serve hot with optional toppings like shredded cheese, sour cream, diced avocado, and chopped green onions
