Smoky BBQ Baked Lentils
Ingredients:
- 2 cups dried lentils
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1/2 cup tomato paste
- 1/4 cup molasses
- 1/4 cup apple cider vinegar
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon liquid smoke
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 cups water
Instructions:
Preheat oven to 375F 190C
Rinse lentils under cold water and drain
In a large baking dish, combine lentils, vegetable broth, diced tomatoes, tomato paste, molasses, apple cider vinegar, soy sauce, Dijon mustard, liquid smoke, smoked paprika, garlic powder, onion powder, salt, and pepper
Add 2 cups of water and mix well to combine
Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes
Remove the foil, stir the lentils, and bake uncovered for an additional 15-20 minutes or until the lentils are tender and the sauce has thickened
Remove from the oven and let it rest for a few minutes before serving
Serve the smoky BBQ baked lentils over rice or with your favorite side dishes
