Keto Beef Taquitos



These Keto Beef Taquitos are a tasty and filling low-carb alternative to regular taquitos. They are made with a crispy low-carb tortilla that is filled with tasty seasoned beef and melty cheese. Great for a keto-friendly main dish or appetizer!

Ingredients:

  • 1 lb ground beef
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 6-8 low-carb tortillas
  • Cooking spray or oil for greasing

Instructions:

Preheat oven to 375F 190C

In a skillet, cook ground beef over medium heat until browned

Drain excess fat

Add diced onions, bell peppers, chili powder, cumin, salt, and pepper to the skillet

Cook until vegetables are tender

On a baking sheet, lay out the low-carb tortillas

Spoon the beef mixture onto each tortilla and sprinkle with shredded cheddar cheese

Roll up each tortilla tightly to form taquitos and place seam side down on the baking sheet

Lightly spray or brush taquitos with cooking spray or oil

Bake in the preheated oven for 15-20 minutes, or until taquitos are crispy and golden brown

Serve hot with your favorite keto-friendly dipping sauce
