Gluten-Free Tuna Cakes
These gluten-free tuna cakes taste great, are simple to make, and are good for kids. They're tasty and low in calories, so they're great as a snack or light meal.
Ingredients:
- 2 cans 5 oz each tuna, drained
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup finely chopped onion
- 2 tablespoons chopped parsley
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 egg, beaten
- Salt and pepper to taste
- 2 tablespoons olive oil for frying
Instructions:
In a large bowl, combine drained tuna, gluten-free breadcrumbs, chopped onion, parsley, mayonnaise, Dijon mustard, beaten egg, salt, and pepper
Mix well until all ingredients are thoroughly combined
Divide the mixture into 8 equal portions and shape each portion into a patty
Heat olive oil in a skillet over medium heat
Add the tuna cakes to the skillet and cook for 3-4 minutes on each side, or until golden brown and heated through
Serve hot with your favorite dipping sauce or enjoy as is
