Cherry Smoked Salmon With Brussel Sprouts
Ingredients:
- 1 lb salmon fillet
- 1 lb brussel sprouts, trimmed and halved
- 1 cup fresh cherries, pitted and halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions:
Preheat the smoker to 225F 107C
In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade
Rub the salmon fillet with the marinade, ensuring it is evenly coated
Allow it to marinate for 30 minutes
Place the marinated salmon fillet, brussel sprouts, and cherries on the smoker racks
Smoke for approximately 1 hour or until the salmon reaches an internal temperature of 145F 63C
During the last 15 minutes of smoking, baste the salmon with any remaining marinade for added flavor
Remove from the smoker and let it rest for 5 minutes before serving
Serve the cherry smoked salmon over a bed of smoked brussel sprouts and garnish with fresh cherries
